Big Guy cooked up a heck of a meal last night and while he'd simply call it "a honkin' big burger with a fried egg on top" I'm gonna' call it a la' Holstein. So sue me!
Simply extra lean ground beef surrounding a hunk of mushroom flavored Brie cheese (courtesy of Trader Joe's), seasoned with salt and pepper and grilled in a hot cast iron pan, he finished the burgers in the oven while he put together the rest of the plate. (As if it needed more) He grilled onions, whipped up a salad and sauteed his forage of the week "Fluted Black Elfin Saddles" aka Helvella lacunosa. "What the heck", you say?
Big Guy's on a mushroom hunting kick and determined to live off the land on which we find ourselves. He found these particular fungai in our front yard at the base of the bamboo, hauled out his constant companion "All That The Rain Promises and More" David Arora's "hip pocket guide to western mushrooms" and cooked up a mess o' the black beauties to go with his holstein. Uh, me? I'm not that brave.
He said they were the best tasting mushrooms he'd ever had but I was reserving judgement until I was sure he was gonna' survive the night. Ha - no really, he did his homework to make sure they were edible. Call me crazy if you want but there's no way I'm eating anything that looks like that.
To be perfectly honest, I'm never sure what he'll come home with next.
Oh in case you're wondering what's happening today - as we speak huge soft fluffy snowflakes are falling and our world is looking a trifle less green and definitely whiter. A rare event at the beach! It is a perfect day for soup on the stove, bread in the oven, a warm fire and a cuddle with the woofs.

That is one scary looking mushroom. I would be leary too! But that burger is definitely over the top.

Mushroom are not scary - big clams are scary! And I would eat both! hehehehehe Marvelous meal right there! If he brings home a calf to raise in the back yard, start to be concerned about the living off the land situation...
