Self said to me the other day - "I dare you to be different". Needless to say I took up the challenge. Cooking for one can be an absolute pain in the hiney and while I was used to it for the many moons before I married Big Guy in 2000, the past 13 years have me a trifle out of practice.
Consequently I put my thinking cap on earlier in the week and decided to cook up a batch of oven roasted pulled pork just to see how many different ways I could use it. I mean leftover leftovers are fine and dandy once or twice, but too much of a good thing is - well, it's just a little too much.
You know we've used the stuff a myriad of ways in the past so I have to admit it was a challenge thinking of something different.

Of course there's always the lowly potato. After all, it is the perfect vehicle for all things wonderful, don't ya' think?
Whether mashed, smashed, baked or fried - you'll never hear a complaint out of me. I coudn't repeat a shredded pork stuffed baked potato because we've already gone there. We've also done pork piled high on top of crisped up smashed potatoes and heck, personally I've even tried potato skins that way because you all know by now how much I love me my 'taters. So listen, are you wondering where I'm going with all this?
How about this one from earlier in the week; pulled pork in a bed of crisp golden fries smothered in cheddar and creamy melted Velveeta ...are ya with me?
Or last night's effort including a mess 'a Mrs. T's cheese and potato perogies and crisped up pork with barbecue sauce?
As for tonight - well, I think maybe a nice crisp salad is in order. I'm kinda' all porked out.

I had no idea you were going the a la JBug "poutine' route!!! Love it!!! That looks so darn tasty!!! I am so there with you!!! I love that combination of cheesy fries and meaty moist goodness!! I am shivering just thinking about it!!!! And I haven't even had BK yet!!! HA! The Perogie and crisped up pork combo looks tasty, too!!! - You answered the challenge well! And yes - time for a salad!!!

Lea - it did remind me of poutine! I even talked to Big Guy about it. I'll have to make it when he's here for good.

Needless to say I only had the cheese/pork/fries combination once. Yikes - talk about big butt itis.
