I know what you're thinking. Blue plate specials are what your local diner calls their meatloaf, or country fried steak, or hot beef sandwich but I'm here to say JBug's Diner's going to start serving Stromboli more often.
Last night's special included pieces of leftover Mozzarella Stuffed Meatloaf along with slices of spicy pepperoni, roasted red peppers and strips of mozzarella cheese. Loaded onto a package of ready made pizza dough thanks to Trader Joe's, rolled into a log and sealed, it hit the oven for 40 minutes and came out screaming for attention. Served on a bed of marinara with a tossed salad and a cool libation to top it all off, dinner was on the table.

Check out the other examples of stromboli we've had here before and while you're at it, try thinking outside the box a little too. How about using some leftover pulled pork that you had earmarked for red neck eggrolls, or meatballs or what about making a giant Ruben stromboli out of some corned beef you're planning for St. Patrick's Day. I would say the sky's almost the limit.

That is great - great use of a great leftover, great meal, great time saver, great visual appeal, great aroma, great everything! Score another one for the GREAT JBUG!!!!

Thanks Sarah. It suits the sparse kitchen equipment we presently enjoy. LOL

Left over madness! Hope you are leaving plenty of leftovers in the freezer for the Big Guy. I am sure he will be missing your cooking for the next couple of months. There isn't a Trader Joes real close, but there are a couple of places that have pizza dough when you are not in the mood to make your own.

Big Guy's determined to finish all the aweful offal we have hiding in the freezer, including but not limited to beef cheeks and javalina. I'm not sure he'll miss me at all (ha...he'd better!)

Don't know why you don't like beef cheeks, and isn't javalina just like pig?

Lorraine - it's the texture of the former and the thought of the latter. Ha.
