The oven barbecued pulled pork we cooked on Sunday has been a real blessing this week. All the packing along with what Big Guy calls "stupid pills" has resulted in a hitch in my getalong and I've been unable to spend a lot of time on my feet the last couple of days without significant back pain.
The three plus pound pork shoulder has really come in handy and produced some quick and delicious dinner solutions including but not limited to last night's pulled pork pies.
I simply warmed the pulled pork in the microwave slightly so it made it easier to handle and added more barbecue sauce to give it a better consistency. A scoop of pork placed on a rectangle made from the Dough Boy's crescent rolls (Pillsbury) along with thin slivers of red onion and a palm full of grated Mozzarella cheese made up the pies' innards. Coated in an egg wash, the bundles hit a 425 oven for 15 minutes while I concocted the salad and dinner was on the table. Yumm - you betcha! Now, about today - you can count on the fact I will not be packing boxes, lifting anything more than a cup of tea and I'm sorry to say, I won't be spending much time in the kitchen either. There is a lesson in all of this that I may or may not have learned...if you're moving and already have a bad back to begin with, hire the packing done. For darn sure it'll be a lot cheaper than the surgery you're setting yourself up for. Just sayin!
Bless your heart, I hope your back is not out of wack for long, my friend! Now that meat pie to die for - love that you took the time to add the onion and the cheese - that for sure was the key to the success in making the meat different than all the other days!!! Bravo!!!!

Funny thing Lea - the pork is gone and we're not tired of it yet. Might have to cook another one.

Nothing better than some butt hanging around to be used for all kinds of things. Again, I agree with Lea! Even with back pain and stupid pills you still put a JBug spin on the darn things. Looking tasty!
