I would hazard to say there's not many households in the country that won't be enjoying leftovers today, thanks to yesterday's abundance and our house is no exception. In fact, our dinner menus will be well taken care of over the next several days but other than repeated turkey sandwiches, we're unlikely to get bored because there's so many different things to be made from leftover bird.
In case you're curious, we kept our Thanksgiving menu really simple. When it's over 80 degrees outside, sunny and gorgeous it is reason enough not to roast the bird in the oven, so Big Guy cooked it on the Weber Rotisserie and, as you can see, he did a fabulous job.
Stuffed with apples, rosemary and fresh thyme, he shot the beauty up from the inside with pure apple juice. That way the skin remained intact resulting in an extremely moist, tender and flavorful bird.
Side dishes included:
Sausage Stuffing with Port, Cranberries & Pecans
Mashed Potatoes
Gravy
Gratineed Mustard Creamed Onions
Roasted Brussels Sprouts
Cranberry Kumquat Sauce
Pumpkin Gingersnap Tiramisu
I'll be passing along recipes to you during the next few days in case you'd like to stash them in your memory box for next year's feast. Meanwhile, enjoy your day everyone. I know it's only a touch after 7 AM here, but personally I'm heading to the fridge for some sandwich makings. Who says you can't have lunch for breakfast?

Lovely Turkey and sides!!!! I would have much more enjoyed lunch at your place !!!! Nice and cozy - There were 50 at my sister's eek!!!!! That a glorious bounty to be thankful for!

Wow I'm not a turkey fan but geez did the big guy do a job on that one...my mouths watering, that will tempt me to buy a small one after christmas when they're giving them away and try one in my rotisserie!

Shaun - it is fabulous; so incredibly moist and tender and ready much quicker than an oven roasted bird and without any basting either.
