I'm in a bit of a pickle today so this will be short and sweet. Our little Maxer is sick, yet again and we'll be off to the Veterinarian shortly - for the second day in a row. If I had a penny.... well you know! Bless his little heart.
Last night's dinner was simple good quick grub most because I was too darn tired to make anything else and Big Guy wasn't home for dinner either. When that happens, it kind of takes away my drive to succeed menu wise, that is. No recipe here people - I'll just tell you what I did.
I took some frozen hashbrowns and put a cup of them right from the freezer into a little cast iron pan. When they'd crisped up on one side, I flipped 'em over then added some chopped up Jimmy Dean breakfast sausage and let 'er rip for a minute, followed by a single egg nestled into the middle and some pepper jack cheese. Covered and cooked until the egg was perfectly to my liking, I garnished it all in a circle of hot salsa and there you have it. Dinner was served!
Delicious sustenance I must say - and definitely improved by the giant glass of wine that went along with it.

Oh Max! Poor little guy. Give him a hug for me, and Finn too just because. Breakfast for dinner is on of my favorite things. This one looks perfect and the pepper jack a great choice.

Hugs gladly given. They're both fine and sleeping at the moment. As for this, I might have to have breakfast for breakfast - ha. Looks like a repeat may be in order.

What great comfort food - both for when you have a missing Big Guy and sick pups. I do hope all is better with the furry friends. That egg looks perfectly cooked! Yum!

Lea - not much better than egg and cheese is there? Max is much better today and we're gonna' officially change his name to "MCR" as in maximum cash required. LOL
