I was on my own for dinner last night and rather than grab a couple of celery sticks and some yogurt out of the fridge which is what I should have done, I had the yen for a nice crispy quesadilla instead. After all, not only are they quick and simple to make, they're the perfect use of any odds and sods you have hiding in the refrigerator. Trouble is they're not exactly diet material but this is a moderation plan, so I didn't have to think of that. Did I?
This one contained leftover grilled steak from the other night, chopped up into bite size pieces along with some of our bacon onion jam, a touch of barbecue sauce and a few sliced up mozzarella pearls - all on a flour tortilla. Sprayed with butter flavored cooking spray it hit a hot cast iron pan and dinner was on the table in less than 4 minutes. It really hit the spot and could only have tasted better had it been accompanied by a nice cold Corona; however, you know there's none of that happening in this house at the moment. Oh well. Baby steps, baby steps ...right?.

Yum - I love Quesadillas - and these were protein packed so all was good! What pretty grapes on the side, too! I'm sure that whatever you did drink with this fabulous meal was a perfect compliment - filled with ice and refreshing!

Lea ...Berry flavored sparkling water from Trader Joe's in a big stem glass with lots and lots of crushed ice. It was OK. LOL Come to think of it, I need one of those right now. Our NEW AC isn't working - repairman's here now. Are we cursed or what?

Quite honestly, that quesadilla you had at the Salty Dawg before we left gave me the "envie". This one wasn't stuffed quite so beautifully but it did the trick.
