One super way to show off your creativity in the kitchen is to make a big pan of nachos for dinner. Afterall, we missed our usual Pink Mountain Friday so it was our excuse to celebrate with a beer and nacho Saturday. I'm not entirely sure why I thought it necessary to make excuses for our unorthodox dinner, but there you have it.
Big Guy was responsible for darn near all of this as I sat on at our new kitchen island on one of the new barstools and threw in my two cents worth and snitched chips while I was at it. Man, I love it when he cooks!
Anyway, should you need one, there's a ton of recipes on-line for nachos - check out this one by Rachael and of course there's Guy Fieri's Italian version that I've had my eye on for a while too. That said, our plates of crisp and gooey goodness included browned ground beef and sauteed onions kicked up a notch with taco seasoning and garlic, along with cubes of processed cheese, warmed refried beans, pickled jalapenos, chopped black olives and lots of grated Mexican cheese blend courtesy of Trader Joes.
Garnished with guacamole, sour cream, salsa from a jar and a squeeze of lime, it was all quite sublime.

I have been known to make nachos for dinner. Why not? It has every thing you want in a complete meal...meat, veg, dairy and grain. Perfect!
