Making dinner was about the farthest thing from my mind last night and typing actually hurts today so this is going to be short. I spent most of yesterday filling holes in what will be our new backsplash because when the worker bees took out the old single layer of Mexican tile it made a big mess.
The tile had been installed with mortor rather than grout so you can just imagine what the state of the wall is and although the first layer of drywall patch screen and mud has gone on, it was at the expense of my fingertips which are all open cuts. Don't ask how but it happened. Now if the mud would just turn white instead of the wet "pink" it still is, I could sand the first layer and get the second one on, but it looks like that will have to wait for another day.
Just so you know I also fabricated new counter tops out of cardboard and black vinyl and they don't look bad. At least it makes the kitchen semi workable now although it is still easier to do most of the cooking outside.
As for dinner last night - thank goodness I had the foresight to cook an extra corned beef brisket for St. Paddy's Day, because I raided the freezer so we could enjoy panini sandwiches with a touch of sauerkraut, mustard and swiss cheese last night along with a green salad.
As for today, I'll be sitting down planning our menus for next week and trying to figure out what the heck to make for Easter Sunday that doesn't require a boat load of dishes, pots or bowls. Wish me luck! Ideas and suggestions would be greatly appreciated.

I can't believe they mortared the inside wall!!!!! Bless your heart - now - a quick fuss - where were your work gloves? The Moma in me just came out hehehehehehe. Ok - I've stepped down from the soapbox now. I am sure the new backsplash will be just fabulous beyond belief in more ways than one!
I would definitely have ham and sweet jalapeño cornbread for Easter - both cook at the same time in the oven. I would suggest sweet peas in honor of spring - but... bbbbwwwwaaaahhhhhhhh. A nice green salad would work fabulous! Keep it light and simple! Maybe a baked tater dish...

Work gloves - hey, I'm a farm girl and gloves are for sissy wussies (unless I'm working in the garden because I don't do bugs and slugs). LOL Thanks for the suggestions particularly the PEAS! I wonder if you can bbq ham???

Lea is my much loved daily dose of Cajun sunshine! Corned beef is definitely one of our favorites - Big Guy even had corned beef hash this morning for breakfast.
