Sorry I'm late again this morning everyone. I'm suffering through what I think is my semi-annual war with allergies so I'm not feeling quite as chipper as normal. It's a good thing The Big Guy's around to take care of us and take care of us he did yesterday with this fabulous pot of chili.
From March's Cooking Light magazine, it is part of a series on great things to make using marinara sauce as a shortcut and believe you me if I hadn't seen the recipe myself, I'd never have known there's marinara in it.
The Big Guy made a few changes to the recipe and added roasted green chiles we had hiding in our freezer instead of fresh jalapenos along with a can of beef consomme rather than using the chicken stock that was called for. Oh, he also topped the bowl of yummy spicy goodness off with some pickled jalapenos, something we always seem to have on hand.
