Tiz' the season for mistletoe, holly and a hearty breakfast to start the day off right. What could be better than a bowl of oatmeal and I'm not talking about that nasty cooked in a bowl "convenience" food that's really wallpaper paste in disguise. Oh no! Not from JBug's Kitchen! Just imagine oats that cook themselves overnight in the refrigerator, with the assistance of a gaggle of leprechauns of course.
We first heard about this quick method for cooking steel cut oats from our friend Tom at Tall Clover Farm and it's been a lifesaver ever since. Hit the link and Tom'll tell you about a great fruit nut mix he makes to go on top of them too! It is absolutely superlative!
Simply boil 4 cups of water in a medium sized pot and whisk in a cup of steel cut oats. Let it simmer for a minute, whisking constantly then remove from the heat, cover and refrigerate overnight. Next morning heat a serving for a minute and a half in your microwave, top it with a light dusting of coarse sea salt and your sweet of choice - brown sugar, granulated sugar, maple syrup, honey or even fresh or dried fruit like dried apples and cinnamon; add a splash of moo juice and a glass of OJ and you've got all the fibre you need to start your day off right.
The bonus is you'll have enough for 4 servings so you can start your day in a healthy way from Monday to Thursday and save your bacon for Friday, Saturday and Sunday. Brilliant, eh?

I do mine overnight in my rice cooker, but this sounds even easier!

Pam - they really turn out well this way, but I'd love 'em cooked any old way at all....rice cooker's a great idea!

Lea - so easy to make and Big Guy loves 'em too. Just wish I'd quit forgetting to make it at night. I think of it every morning when I'm figuring out what to cook for his breakfast. Ha.
