This is the second in the leftover roast beef series and we're not tired of it yet, although the Big Guy sliced up the rest of it yesterday for various other purposes and stuck it in the freezer. He kept out enough for these lovely sandwiches, as well as a repeat in the next day or so. Lucky us!
He cut the slices so perfectly thin they only have one side, piled them all together and put them inside some soft buns, grilled on the inside. Topped with some of the horseradish sauce that was the star of our Christmas dinner, the sandwiches were finished with golden brown grilled onions, ripe juicy halved mini-plum tomatoes and slices of creamy gorgonzola cheese. If these are leftovers, bring 'em on!
As for today - the Big Guy's working his way through his honey do list and yesterday, did some remodeling in the laundry room, moving cabinets and installing shelving. It looks fabulous, functional and I love it. Today he's re grouting the master bedroom shower and then retiring to the garage to work on the bow he made. As for me, I've a mountain and I do mean a mountain of ironing to do. Woe is me!

Lea - Thank you my friend. Now I wish I could think of something spectacular for dinner tonight ...I'm kind of leaning towards reservations. Ha.
