We (meaning me) had a craving for some good old fashioned fish and chips last night but there was one little issue to deal with. They couldn't be deep fried because I was out of oil and had absolutely no intention of hitting the grocery store the day before our typical shopping day. The resulting panko coated fish and oven fried chips made it evident there's no need to stink up the house with the smell of boiling oil when you can get the job done just as well without it and sans the ton of calories too.
Cod fillets cut into fingers, coated with salt, pepper and cajun seasoning, then dipped in flour, an egg wash with a touch of hot sauce then coated in panko crumbs and fried in a smidge of vegetable shortening took care of the fish. The oven did the trick on the fries - yukon gold potatoes sliced into chips and soaked for a half hour in water, then drained, dried and coated with cooking spray. Baked for 25 minutes in a 500 oven with a toss half way through, then dusted with coarse salt and freshly ground pepper and that was it! You could call it dinner, but we'd call it delightful.
Moral of the story - who the heck needs a recipe when you've got an imagination.
