With all the cookin' that goes on in JBug's Kitchen, there are times the Big Guy screams for something very ordinary which is rather hard on my ego. I mean there's not much one can do to jazz up a request for weinies and cheater beans except maybe to add a little maple syrup to the beans so that's what I did.
Thanks to some inspiration from Tasty Kitchen, I sauteed maple smoked bacon pieces until they were just starting to crisp up, then added a chopped onion, garlic, minced jalapeno, brown sugar, Dijon mustard, maple syrup and a cup of tomato sauce to some canned baked as well as great northern beans. Topped off with a touch of water and given 1-1/2 hours in the oven, they looked and tasted almost like scratch beans.
Topped with a crispy grilled good quality wiener sausage and garnished with red onion and cheddar, it rather took care of you know who's craving for "simple" and satisfied my need to add a little somethin' somethin' to everything I do.
By the way, the beans would be a great thing to have going in the oven on the day you're putting up your Christmas decorations or hitting the ski slopes. Add a pound or two of good ole' Jimmy Deans maple cured sausage to the mix and some biscuits and you'll really satisfy the restless natives.
Bacon Maple Cheater Beans (inspired by Tasty Kitchen)
6 ounces bacon, chopped
1 large onion, diced (about 1-1/2 cups)
2 cloves garlic
1 jalapeno, minced
1 – 28 ounce can baked beans
1 – 14 ounce can great northern beans, rinsed and drained
1 teaspoon salt
2 tablespoons brown sugar
2 tablespoons Dijon mustard
1/3 cup pure maple syrup
1 cup tomato sauce
Water as required
Minced red onion, jalapeno & grated cheddar for garnish
Preheat oven to 300. In a large Dutch oven cook bacon over medium low heat until fat is rendered and bacon starts to crisp. Add onion, garlic and jalapeno and cook until onion is softened, stirring often. Add baked beans, rinsed and drained great northern beans, salt, brown sugar, Dijon mustard, maple syrup and tomato sauce. Add just enough water so beans are covered in liquid. Bring to a boil, and then place in oven, uncovered, for 1-1/2 hours. Garnish with onion, jalapeno and grated cheddar. Makes 4 - 6 servings. Download Bacon Maple Cheater Beans

Baked beans and hot dogs (with bacon), how can you go wrong? The Dijon and maple syrup really class it up!
