We decided to fore go the usual Thanksgiving hoopla and stress this year and instead we're keeping our menu very simple for a change; however, simple means I still spent most of yesterday afternoon in the kitchen doing some pre-prep for the big day. Believe me, I know I'm lucky not to be working outside the home and thus have the luxury of spreading the tasks out over a few days, but I was still exhausted last night after my morning housecleaning and afternoon cooking. What happened to the stamina, I'm wondering.
Last night's dinner was simple by necessity and certainly delicious in its own right. The Big Guy loves beef patties on salad so I added a touch of Mediterranean flavor to the pound of lean ground beef and threw in some oil packed sun dried tomatoes, minced garlic and Italian seasoning along with panko crumbs and an egg for added moisture, then whipped up a quick salad and promptly collapsed. The Big Guy picked up the slack and slapped the burgers on our trusty little gas grill and dinner was a done deal.
Sorry for the short post people, but I'm off to the kitchen to work a little more magic on our "simple" Thanksgiving feast. Cheers everyone!
