Happy Thanksgiving to all my Canadian family and friends. Early though it is, I have a feeling most of you are already hard at work in the kitchen producing a fabulous dinner of epic proportions. Alas, there's no turkey cooking in our kitchen today so I thought we'd do a little reminiscing instead and pass along a few ideas of what to do with some of the yummy leftovers you're bound to have.
The first thing that comes to mind in our house is using some spare bird pieces to make a glorious little pot pie. It should be no surprise there are several versions on this site - we happen to love the things, so just use up some of that turkey bird and wow your family with one of these.
Pot Pie with Bacon and Marjoram Curried Turkey Pot Pie
Of course, don't forget to whip up a casserole or two, like maybe a
Turkey Cordon Bleu Casserole Quick Turkey Casserole
Or there's no shortage of ways to use bird in Mexican Food
Stacked Enchiladas Turkey Stuffed Anaheim Peppers
Of course there's always the fabulous and utterly sublime like
Turkey Mushroom Bread Pudding Creamy Turkey and Wild Rice Soup
And if all else fails, just drown yourself in a vat of gravy and whip up a lovely hot turkey sandwich .
I figure there's not much sense in supplying tips on what to do with the leftover pumpkin pie now is there, except to say that if you're really looking to save energy, leave the fork in the pie plate so you don't have to go huntin' for one every time you feel the need for a bite. Not that I would do such a thing of course, but I'll tell ya'...it certainly does save time on the dishwashin'!

For us it was ham, new potatoes, caesar salad, butternut squash with apples and, of course, pumpkin pie (but with a ginger snap crust). Yum.

Really not a big turkey fan, but you make me want to have a big one just so that I have plenty of leftovers!

Lorraine - turkey's one of my favorite protein's although maybe it's because we don't have it that often. The great thing is that all of the recipes listed in here are equally great made with chicken.
