Remember the tri tip roast we cooked up recently? Being the frugal soul that I am, I divided and froze the leftovers in zip bags with some grand ideas for its future. Good thing I'm such a planner.
We celebrated Pink Mountain Friday last night with a couple of knock out sandwiches. Fresh panini rolls slathered with mayo and horseradish, topped with thinly sliced and slivered medium rare tri-tip, roasted red and yellow peppers, pickled jalapeno slices and an assortment of cheeses including bits of fontina, sharp cheddar, Italian 4 cheese blend, fresh mozzarella and a smidge of gorgonzola.
Slathered with butter and cooked till crisp in a hot panini grill, not only was it a great way to use up some tri-tip leftovers, it did short work of all the bits and pieces that collected in the cheese drawer over the past week or so. Rather brilliant, don't ya' think!
Sorry there's no recipe because we just threw them all together. Does it give you some ideas?

Uh...me too. That's been the biggest issue and I have to admit, the elliptical has been on hiatus lately. It's a bear and so am I. LOL

Oh my! I could eat the panini with just the cheese you included. What a fantastic idea...cleaning out the cheese drawer onto a sandwich. The beef is just icing.
