We've been dining much too fine lately - at least that's the excuse I thought I could fool you with but the truth of the matter is the cook just didn't feel like cookin' last night. Don't worry, it wasn't due to illness or any such thing, just pure and simple laziness. The question of the day was "what could I make that demanded the least amount of effort?"
A quick check of the resources and I eyeballed the leftover steak hiding in the freezer from the weekend, along with some lovely fresh beets in the refrigerator, so a glorified salad made the dinner list. Crisp and tender butter lettuce, red onion, steak with a dab of horseradish, roasted beets and ranch dressing - I mean what could be better than that, right?
Well, if you know me at all, you'd know I always have to take things one step further even when I've been bitten by the lazy bug. Since I also had a sheet of puff pastry in the freezer, I made up these wow little pinwheels from pastry brushed with dijon mustard then loaded down with caramelized onion, crisp bacon and grated swiss cheese. Rolled up like a jelly roll and sliced into 1 inch pieces, they baked in a hot 400 oven and 15 mintues later came out crispy, oozing cheese and full of bacon/onion flavor. Talk about scrumptious giant croutons!

Talk about a salad on steroids! That looks sooooooo good! Love the pinwheel idea - I think I have all the ingredients here... hmmmm maybe this weekend!

Lea - I think you could put darn near anything in the pinwheels. This version tasted just like Quiche Lorraine, but don't tell you know who! LOL

You know I love a good salad, and the Quiche Lorraine Pinwheel...well I'll be working on this one soon.

Nothing simple about the steak salad that seems perfect as a GREAT leftover dining experience. Puff pastry eh? Well your ideas and results using it for the pinwheels is sounding pretty good! HUGS, Mary L.

Can't take credit for this being original, as thanks to Pepperidge Farms we've done it before on this site way back in February except we used bacon, dates and gorgonzola cheese. I'm not sure which version was my favorite so I might have to make them both again before declaring a winner. Mary & Lorraine - pick your favorite and let me know what you think too, OK? LOL
