Last night's dinner was inspired by a post last week on Pam's site, Sidewalk Shoes. I visit her daily and she's one very talented lady with a great sense of humor to go along with her keen eye for beauty. She's also partial to wine as well as gin and tonic and you all know I hold both of those things in very high regard.
I changed very little in the preparation for this meal except that I dusted our salmon fillets in salt and coarse ground pepper and gave them a bath in Kicky Kumquat Marmalade before baking them in the oven instead of putting them on the grill. It's darn hot and sultry in this man's country so I didn't have the heart to ask the Big Guy to fire up the charcoal for the 6 minutes it would take to cook the darn things, never mind the mosquitos are out full force after our huge monsoon storm night before last. The little suckers are everywhere, even here in hell.

I adore salmon made in any old way June. But this has a summer flare to it that needs a bottle of very chilled white wine to go with it! Oh dear... Woke up hungry again! I'm truly embarrassed to tell you that I bought my 1st mango last year! Now that I did, I buy them occasionally. - HUGS, Mary L.

Mary - you're right, the wine would be perfect. Re mango - fresh ones don't seem to last very long here so I often buy frozen chunks at Trader Joe's. They're wonderful in salsa and great in a morning smoothie.

Mary - you KNOW I'm jealous of where you live. The Willamette Valley in Oregon is one of the most beautiful places on earth. We called it home before we moved here. Darn! By the way, if you miss the mosquitos we can always send you a few, along with some scorpions, killer bees, and rattlers but you'll have to ship'em all back after we move home to Oregon. LOL
