Hope you all had a fabulous Independence Day. We celebrated as well with a wonderful breakfast cooked by the Big Guy after a grinding workout at Diane's Fitness, followed by a few hours in front of the television watching the Kennedy mini series. We ordered the DVD's on-line and brought it with us from home and it is amazing. Thanks Mary L for the recommendation!
We also went for a long walk on Governor Patterson beach and a short drive through Yachats to do a little people watching, then home to drinks and dinner. It was a great day as you can see from this tired dog, kinda' serious Big Guy and happy me. Don't kid yourself; the Big Guy's smiling under that mustache and as for me, I could hardly haul myself outa' the car when we got back to our cottage.
We joined in on what seems to be the National trend and had tube steak for dinner last night, hot off the grill but instead of the standard potato salad and Pringles, I whipped up a little pasta salad.
This salad's different from most in that it includes black beans and corn, along with green onions and chopped sweet red peppers in a spicy creamy dressing made from sour cream and hot salsa. Personally, I thought it went very well as a side dish to a perfectly dressed hotdog but as you can see, the Big Guy just had to go one better. He dressed his dogs with some leftover OK Chili from the night before.
Judging from the size of the plate and the number of beans present, I'm almost positive it's gonna' be another windy day on the beach, if ya' know what I mean.
Southwestern Pasta Salad (adapted from Taste of the Territory)
10 ounces bowtie pasta, cooked per package directions and well drained
1 – 15 ounce can black beans, rinsed and drained
1 – 15 ounce can whole kernel corn, rinsed and drained
1 sweet red pepper, chopped
4 green onions, chopped
1/4 cup fresh cilantro, chopped (optional)
Dressing:
1 cup non-fat sour cream
8 ounces hot thick and chunky style salsa
1/2 teaspoon cumin
2 cloves garlic, minced
Combine dressing ingredients in a large bowl and whisk well. Fold in cooked pasta, black beans, corn, sweet pepper, and green onions. Refrigerate for a minimum 1 hour to blend flavors. Garnish with cilantro. Makes 8 servings. Download Southwestern Pasta Salad

Mary - LOL. We've a lot of chili AND salad leftover, so gale force winds are guaranteed. (TMI?)

What a fun day you had! - you both look tickled - and the Maxer certainly wore himself out!
That pasta salad looks fabulous - do you think it would work with a green chile salsa?

Lea - it would be great with salsa verde. Darn, you always have the absolute best ideas and I'll be trying that one asap.
