Last night's dinner was a celebration of the Pacific Northwest, rather fitting since we're packing up today to leave this heaven tomorrow. Can't believe our month has gone so quickly but time always does when you're enjoying yourself.
The Big Guy did the grillin' yesterday and soaked the applewood planks for a good hour before slapping them on the grill. As for the glaze, he concocted one out of what we happened to have on hand - a quarter cup of maple syrup, along with 2 tablespoons each of soy sauce and teriyaki. He cut our whole 3.5 pound salmon in half lengthwise, cleaned it all up and removed the bones before he slathered the glaze onto the fish and let it marinate for a few hours in the refrigerator before he put it on the grill.
Oh about the grill - at home he would have used the indirect method, but the little charcoal grill that came with our cottage was just that ...little, so he placed the fish on the prepared planks directly over the charcoal, put the lid down and let it rip for about 15 minutes.What can I say...the man's a genius!
We had our perfectly wonderful gloriously pink sockeye along with some roasted vegetables covered in a dill sauce. It was a little more calorically responsible than the previous night's feast, but no less delicious. By the way, the rest of the salmon's going into a spread that'll be our lunch on the road but I'll fill you in on that one later.

Lea - I'm so sad and miserable the Big Guy's taken Max to Newport so I can pack and cry in peace. We've already booked a place for next year so we'll be back, but darn - other than the day the Christmas decorations come down, this is the second worse day of the year. (I'm such a drama queen, aren't I???)

June, Sorry to see you leave, but I am looking forward to the kitchen antics from your own backyard. We are of a like mind...I just picked up some cedar planks and will be hitting the fish store sometime this weekend. Will definitely try the maple glaze.

Lorraine - we love cedar too and if you've a chance try applewood. It was exceptional with the salmon but you may have to buy it online.
Alder's great too.

I know you think I'm kidding, but won't you reconsider adopting me. I keep my room clean (well kinda), don't stay up late, and promise no back talk (unless I'm denied a place at the dinner table). June so glad you got back to the coast for your summer break in the Great Pacific Northwest.

Hey Tom - why don't we just do a house switch. August would be good. I'll come to you, and you can hit Tucson about December when the fall is a distant memory. Just kidding about the August cause the Big Guy'll be miffed, but you can come to Tucson anytime and I'm not kidding either. We're in Redding right now and I'm still in tears. Max is totally bummed.
