I'm leading you down the garden path with this one or at least to the herb garden which in most cases should be absolutely booming by now. Unfortunately ours is dying off at a rather alarming rate from all the heat and in the case of the rosemary too much watering, but thankfully the basil's going ballistic which is OK with me.
Some of it went into last night's lamb patties, along with mint, cilantro, minced sweet onion and a touch of yogurt. What resulted, with kudos to Rachel Ray, is an incredibly flavorful, lower calorie version of a perfect summer burger, spiced up further with some mango chutney and garnished with more sweet onion, cucumber and the rest of the mache from the other night.
We had our pita pockets along with some crudite' just so we could polish our halos and brag a bit. Believe me it was shortlived because I also made a rather brag worthy dessert, but I'll tell you about that one later.
By the way, if you're watching your carbs, load your lamb patties into some crisp lettuce leaves to make a wrap. Believe me it'll be delicious and you won't feel deprived - not one bit!
Minty Lamb Patty Pita Pockets (adapted from RachelRay.com)
1 handful each cilantro, basil and mint
1 pound lean ground lamb
1/2 cup minced sweet onion
1 tablespoon cumin
1 teaspoon steak grill seasoning
1/2 teaspoon garlic powder
1 teaspoon coarse ground black pepper
1/2 teaspoon sea salt
1/2 cup Greek yogurt
2 tablespoons sour cream
Pita bread
Mango chutney
Lettuce, sweet onion, cucumber slices
Place cilantro, basil and mint in a food processor and pulse until well chopped. Add to ground lamb along with onion, cumin, steak seasoning, garlic powder, pepper, salt, yogurt and sour cream. Divide and form into 8 small thin patties.
Spray large heavy skillet or flat top grill with cooking spray. Heat to very hot. Add lamb patties and cook for 4 minutes total or until no longer pink inside, flipping half way through. Heat pitas. Cut tops off the bread and fill with patties. Garnish with lettuce, sweet onion, cucumber and mango chutney. Serves 4. Download Minty Lamb Patty Pita Pockets
