Doesn't the word "chimichurri" make you want to start singing a song from Mary Poppins? Gotcha - now you'll be singing "chim chim churri all day". We, perfect beings that we are, were singing only one note last night when we tasted this sauce on our steak and that would be "yum"!
Simply made from minced onion, red bell pepper, garlic and parsley with a touch of red pepper flakes and dried oregano in equal parts olive oil and red wine vinegar, this sauce by any other name could be a vinaigrette. It needs a couple of hours at room temperature to mellow but honestly it was mighty fine as the dressing for our steak topped salad greens and makes an incredible marindade too.
It made for a wonderful early summer dinner on what is traditionally America's national grillin' day! Hope you all had a wonderful Memorial Day weekend and took a minute to think about the true reason of the holiday.
Chimichurri Sauce
1/2 cup olive oil
1/2 cup red wine vinegar
1/2 cup minced onion
1/4 cup minced red bell pepper
1/4 cup chopped parsley
3 cloves garlic, minced
1 tablespoon dried oregano
1 teaspoon freshly ground black pepper
1/2 teaspoon red pepper flakes
1 teaspoon sea salt
Whisk ingredients together and let sit at room temperature for 2 hours to allow flavors to blend. Serve as a marinade or sauce for meat or poultry.
