What to do, what to do with some of the Big Guy's barbecue meatloaf was the question of the day yesterday, but hey no problemo. While the little flavor bombs are great hot or warm, they're also fabulous cold.
Loaded up with provolone and roasted red peppers our dinner came together pretty darn quickly last night. We could have had fries with our sandwiches, but opted for this broccoli salad instead. Now who says broccoli always has to be healthy ...I mean, why not make it "un" and add bacon, dried cranberries, salted sunflower seeds, mayo and sour cream too? Yup that's what I did and we love the darn stuff. Of course, we would - it's loaded with calories!
Crunchy Broccoli Salad Adapted from Jackson Hole Cooks by Rebecca Woods
4 cups fresh broccoli, washed and chopped (including stems)
1/4 cup chopped red onion
1/2 cup sundried cranberries
1/2 cup salted sunflower seeds
4 slices bacon, cooked till crisp and crumbled
Dressing:
1/3 cup light Mayo
1/2 cup light sour cream
3 Tablespoons sugar
2 Tablespoons white vinegar
Toss ingredients together in a salad bowl. Whisk together dressing ingredients and toss with broccoli mixture. Refrigerate at least one hour to blend flavors. Serve cold. Download Crunchy Broccoli Salad
Broccoli salad sounds wonderful AND even healthy using the light mayo & sour cream. However, meatloaf is my favorite second only to turkey & stuffing sandwiches. Bet it was fabulous June!

You've got me craving turkey and stuffing sandwiches now - darn! I agree, meatloaf sandwiches are toward the top of my list too, but memories make a tomato, basil and fresh mozz sandwich on a soft but crunchy baguette from a coffee shop just down from where I lived in Calgary TOPS! (Is that a run on sentence? LOL) Can't believe I haven't been back to Calgary in darn near 11 years.
