There's absolutely nothing gourmet about last night's bowl of comfort food, but then again not everything has to be. After all, JBug's Kitchen Antics is all about "everyday" so you won't be hearing any apologies from me.
Born of necessity as in the Big Guy wasn't home for dinner last night but it was necessary to have something to give him for lunch today, this casserole is simply an amalgamation of a little bit of this and a little bit of that.
Quite honestly I had half a mind to load it up with peas and beans, but it is his birthday week so I substituted asparagus as the green stuff. Aren't I wonderful. Hey, I wouldn't have minded being spoiled by dinner at Pastiche last night too like you know who. Whine, whine!
By the way, the Big Guy had the Rosemary Crusted Pork and Butternut Squash Risotto with poached figs, goat cheese and pine nuts. Sounds delicious doesn't it. Good thing he had the sense not to brag about it too much.
Easy Cheesy Chicken and Noodles
3 chicken tenders, cut into half inch pieces
1 tablespoon vegetable oil
1/2 a medium onion, chopped
1 large clove garlic, minced
Salt, and Lemon Pepper to taste
1 cup fresh asparagus pieces
4 ounces wide egg noodles, cooked per package directions
4 ounces Velveeta cheese cut into cubes
Pasta cooking water as needed
Hot sauce as necessary to make it palatable
Heat a sauté pan over medium high and add vegetable oil. When oil is shimmering, add chicken tenders, onion and garlic. Cook until onion is soft and chicken is no longer pink. Season with salt and lemon pepper. Add asparagus along with a half cup of pasta cooking water. Cover and simmer for 5 minutes until asparagus is tender crisp and chicken is cooked. Add cooked, drained egg noodles and Velveeta cheese. Toss ingredients together until cheese is melted. Pass the hot sauce. Makes 2 large servings.
Yup my lips are sealed. At least until lunch.

Lea - I'm trying to cut back (ya right!). LMAO. I actually looked at it as well as the can of cream of chicken soup in the pantry and nixed 'em both. It just didn't need it.
