There's happenings around this place let me tell you. I figure it'll be a miracle if the big guy doesn't think he's arrived at the wrong house. I'll amend that - for sure he'll recognize the garage because I haven't got there yet, but we're almost at the end of the big spring cleaning fest and Goodwill has benefited greatly from the binge. Talk about de-cluttering!
Last night I was looking for something quick but delicious and since I did the grocery shopping yesterday, I picked up some Chinese noodles and made this noodle dish with curried peanut sauce. The only problem was I bought the wrong noodles, but what the heck - it was good anyway. The recipe is courtesy of Mary at One Perfect Bite who posts the most unbelievable food. Mary's been on a peanut binge lately and since I too found a big bag of ground nuts in my freezer during my spring purge, I thought I'd put some to use in this great curried noodle dish.
While Mary shows her noodles plain, I felt the need for a little meat so dusted a couple of chicken tenders that I'd cut in bite sized pieces with cornstarch and gave 'em a quick saute'. Topped with some crunchy peanuts, the bowl of yummy deliciousness went down PDQ, and the bonus is I've lunch waiting in the refrigerator for later today. As for the curried peanut sauce, it was all I could do not to lick the empty pot. I'll be making it again in the very near future as a dip for chicken wings, tenders or with shrimp on one of our Friday night munchie nights.

That looks so good - I will definately have to try that - I also have enjoyed things from Mary's site! I just can't believe I grew up NOT eating peanutbutter... I did get better - so it is ok!
But, Junie - NO PEAS???????????? They would have worked - I know they would have! You just might have missed your last opportunity!!!!

Lea - I did miss my opportunity but only because I picked up mixed veg at Trader Joe's rather than peas and I was too lazy to pick 'em out of the mix. Is that pathetic or what?
