I came across this recipe on the Pepperidge Farms site and thought we really needed to give it a go. I mean what's more interesting than combining dates with blue cheese and bacon, unless it's figs with blue cheese and bacon. I don't know about you, but I get tired of the same old flavor combinations so I'm usually game to try something new. Just don't tell the big guy or he'll have me eating some of the javalina languishing in the freezer from this year's hunt that Big Bad John left for us to "enjoy". Darn and here I thought I was off the hook!
There's croutons people and then there's the flavor filled totally addictive puffy crispy wheels of yummy goodness we had on our greens last night. As we were enjoying them, we could think of a bunch of combinations using different ingredients like proscuitto, sundried tomatoes, olives, mozzarella, garlic and pinenuts, or chicken with hoisin and green onions, or even pears, brie and pecans but the balsamic soaked dates over bacon with crumbled gorgonzola all wrapped up in puff pastry were absolutely stellar.
They'd be superlative as an appetizer with a glass of sherry before dinner, or with fruit and port after or just as we enjoyed them with some of the big guy's fabulous barbecued ribs and a glass of wine. One thing I know for sure...we haven't seen the last of them in our house. Put 'em on your list to try. I guarantee you'll think you're really on to something!
This is a really nice recipe. Your pinwheels look really delicious. I hope you have a wonderful weekend. Blessings...Mary
