Cooking for one can be a bit of a pain can't it? I mean without an audience and therefore purpose it can be difficult to be interested in much more than a bowl of cereal or better yet ice cream for dinner; however, having to report to you all in the morning kind of kept me on the straight and narrow last night.
A big fluffy baked potato, while mighty tasty on its own also makes a fabulous vehicle for just about any filling you can think of. In this case I simply browned a little onion along with some ground beef, added garlic powder, lots of pepper and a touch of barbecue sauce and stuffed the hollowed out spud with the spicy concoction. Topped with grated cheese and the rest of the potato, mashed with a little butter and sour cream, the whole thing got a minute in the nuker to melt the cheese. Of course it would have looked better had I used the oven to crisp it all up a bit, but surely it wouldn't have tasted much different.
Best of all, I can do it all again today if I want to because I still have half the filling left. Course it would go rather well in a quesadilla too, now wouldn't it? By the way, I promise I'll get back to some more inspired cooking soon - the big guy's back tomorrow and I need to get off my sorry butt and get this house in order. The ...uh party's over.
That sure looks good - I never met a potato I didn't love!

Me neither Lea. I dream of ways to cook the darn things but baked or mashed are still my favorites.
