Sometimes the business of living gets in the way of putting dinner on the table, you know what I mean? Such was the case last night although for sure it ended up tasting like I'd fussed. Picture this...oh you don't have to. You're looking at it.
A lovely soft bun loaded with smoked turkey and rich, luscious triple cream brie then slathered in red pepper jelly. Given a brush with melted butter and grilled on a Mario panini press, dinner was ready in a flash and devoured by two very hungry souls. It was wonderful and proves one very important thing. Sometimes it is all about the ingredients and less about the preparation, and that my friends is pretty hard on this hobby cook because I'm usually ALL about the fuss.
The mesquite smoked turkey had just the right hint of smokiness...the bread was perfectly fresh and wonderful...the red pepper jelly had just the right kick...and the brie...well the brie was absolutely amazing. I used Le Delice de Bourgogne imported from France via Trader Joe's and it is amazing! A touch expensive and worth every single solitary centime.
All of them could stand perfectly on their own, but combined in a sandwich - perfect bliss. Course the creamy, veggie laden macaroni salad helped too.
Enough said. Go make the darn panini. You won't be sorry. Trust me.
Turkey & Brie Panini with Red Pepper Jelly (adapted from Southern Living)
5 ounces triple cream Brie
12 ounces thinly sliced smoked turkey
4 tablespoons red pepper jelly
2 soft focaccia rolls
1 tablespoon melted butter
Trim rind off brie and discard. Cut Brie into quarter inch thick slices. Place brie slices evening on bottom half of roll, and cover with layer of smoked turkey. Spread red pepper jelly on top half and place jelly side down onto turkey. Brush sandwiches with melted butter. Cook sandwiches in hot panini press until golden brown and oozing! Hint - Use a sharp wet knife to cut soft cheese and the slices will slide right off the knife! Also, save the brie rind and add it to a cream sauce for great flavor. It's also fabulous on a pizza!
