Soup seemed like a great idea for dinner last night but it had to be easy, spicy and pure comfort which just about describes this Lazy Lasagna to a capital "T". Thick and chunky, when this hot soup hits a layer of mozzarella cheese in the bottom of the bowl you're reminded of the real thing with every gooey bite.
Chock full of spicy Italian sausage, sliced mushrooms, onions, and zucchini, it more than hits the necessary nutrition requirements never mind that a pound of sausage will provide 6 to 8 servings of this gooey, delicious fun to eat soup. Lazy Lasagna in a Bowl (adapted from Canadian Dairy Association)
1 pound hot Italian sausage (bulk or casings removed & crumbled)
1 large onion, finely chopped
8 ounces mushrooms, sliced
1 large zucchini cut in quarter inch dice
2 teaspoons dried Italian seasoning
1/2 teaspoon dried red pepper flakes (optional)
1 teaspoon garlic powder
Pepper to taste
2-1/2 cups chicken broth
1 – 28 ounce can diced tomatoes
1 cup small shell pasta (or any small pasta)
1 tablespoon all purpose flour
1 cup half and half
Salt if necessary
3/4 cup grated mozzarella cheese
Heat a large pot over medium heat. Add Italian sausage and cook stirring to crumble until meat is no longer pink. Remove from pot and set aside. Drain all but 1 tablespoon of fat. Add onion and sauté for 2 minutes, stirring constantly. Add mushrooms, zucchini, Italian seasoning, red pepper flakes and garlic powder. Season with pepper to taste. Cook stirring occasionally until vegetables are softened and no liquid remains from mushrooms. Add chicken broth and diced tomatoes. Bring to a boil, add shell pasta and reserved meat, reduce heat to simmer, cover and cook for 10 minutes or until pasta is al dente. Add flour to half and half and whisk well to remove any lumps. Add to pot, and cook stirring from time to time until soup is thick and creamy. Check for seasoning and add salt as required. To serve, place small handful of grated mozzarella in bottom of each bowl and ladle soup on top. Serve with garlic toast on the side. Makes 6 to 8 servings.
Comfort in a bowl. That is what that is, for sure.

Geez Mags - I hope you're feeling better soon! Thankfully I am and yes my appetite's back but the run of bad luck is still going strong. Up all night with a sick dog (hey...he ate a bunch of tissues so it serves him right)Nature has come through and it's mostly resolved itself one way or the other but darn he was a sick puppy

I made this yesterday and we ate it sitting outside waiting for our trick or treaters. I just finished some of the left overs for lunch. I will definitely make this again soon - it was wonderful. A note of interest for you - on the download copy you didn't mention when to add back the sausage. I notice you did mention it on the blog. No worries I just added it back before the cream was added. Wonderful Wonderful dinner.
