Well, here we go finally with today's post. It appears that Typepad aka Six Apart finally have their proverbial eggs in a basket. Talk about another example of a "make work" project and/or someone trying to justify their existence by making a simple task more complicated. Pray tell, if you have only good things to say about your blogging platform, fill me in. I'm 'bout frustrated to the nth degree.
There are leftovers and then there's LEFTOVERS! Last night the big guy had a family commitment and I was on my own for dinner. That meant it had to be something that required as little cooking as possible and since we didn't make our usual shopping excursion yesterday, choices were minimal.
The result - well you might as well call a spade a spade. Something I described last year as "Rissoles" became plain old fried mac and cheese last night, but believe me there's nothing plain or old about it. Coated simply in panko crumbs and fried in a small amount of vegetable oil, the cold mac and cheese morphed into a creamy gooey crunchy mass of goodness. About the only real change from the previous version is that they were A LOT smaller. See what I mean?
A great appetizer or main course, I had my fried mac and cheese along with some Herdez 5 Chile Salsa, but ketchup would do just fine. Oh, and if you really want to be healthy for some strange reason, you can have it with a salad too. Believe you me, once you fry this puppy, you'll never look at leftovers in quite the same way again!
My goodness - I think you might have improved on perfection?

Paula Deen would love ya for this one June. The only thing that beats mac and cheese is fried mac and cheese...YUM!
I didn't realize that typepad was on the fritz this weekend but I've been running around like a chicken with its head cut off. The kids left this morning and I slept almost all day!
