Friday night's finger food around here so it seemed like a great time to use up some of that wonderful citrus marinated roasted pork the big guy stored in the freezer from last weekend.
I think there's as many ways to make a Cuban sandwich as there are chefs in the kitchen, at least there seems to be a regional difference depending on what area of the Sunshine State you happen to be visiting. Before the sandwich police ticket me for this version, I'd like to clarify I'm certainly not claiming this one's authentic by any means as it really kinda' morphed into a roast pork panini, but typically the pressed sandwich includes roast pork, ham, salami (sometimes), sweet or dilled pickles, and cheese - all on a soft, buttery brioche like kinda' roll. Lacking the inclination to make the rolls, I used Trader Joe's panini rolls instead and built our sandwiches based on what we had in the fridge; roast pork, ham, swiss cheese, grainy mustard and bread and butter pickles.
While it was OK, I admited it wasn't the best panini I'd ever made to which the big guy replied "it's the best one you made today". Ain't he somethin'?
By the way, as I write this it's very early in the day. The sun's just starting to come up and darn, I've been awake since 3 bells. Amazing what one can get done in the early hours of the morning. I mean the menu and grocery list are done for the week, cat and dog fed, and I've already figured out who did it after reading the first 4 chapters of a new murder mystery ...all that before finishing my first pot of coffee. Hope you're all relaxing on this first day of a long weekend because I'm surely having a hard time doing it. Restless? You bet!

I have days like those, where I wake up ready to go at some un-godly hour. Then usually around four in the afternoon, I am completely done for.

I just had a very long nap and feel much more human. Trouble is, it's only a couple of hours until bedtime. Mmmm
