I just know this is going to make sense to someone. Trader Joes has a new sliced cheese available called "Blue Granite Jack Cheese Slices". It's a marriage of Jack cheese and Roquefort and screamed at us loud and clear last week when we were buying groceries. I could just picture it in a burger or on a sandwich ..all melted and creamy and thought darn; there's our Friday night dinner!
Now do you understand? As you know, Friday night's are the "easy on the cook" night in this house and just how complicated can a good Panini be? I made two different versions of the sandwich because we couldn't decide on caramelized onions or roasted red peppers, so we spit one of each. The rest of it's just deli roast beef and that fabulous cheese along with a slather of mayo and coarse ground mustard.
Perfectly crisp on the outside thanks to our Mario Batali grill pan, creamy and rich on the inside, this sandwich deserves a second chance. You see, I dropped a crumb on the floor while I was eating it and horror of horrors, the dog beat me to it. Isn't that reason enough to make another one?
Of course you deserve another one, you didn't get to eat your WHOLE sandwich.

You absolutely deserve a whole sandwich - as does Max! Those look fabulous and I would have gone for that cheese myself! I adore cheese and have about 10 different kinds in my cheese drawer at the moment. I think Monday night will be a tasting night with some salami and wine... and save some bits for Camille Ana for her lunch for Tuesday - make those other K kids jealous! Paninis are where it is at!!!!

Paninis are the best - all that crispy goodness. Unfortunately Max doesn't get much people food because he's on a strict diet due to the seizure medication, but he does manage to vacuum the floor as much as he can. The little crumb thief.

Kathy - it is quite the find and absolutely delicious. Not quite as sharp as plain blue and melts much nicer.
