Yesterday was one of those days in the kitchen. You know the kind I mean, don't you? The ones where Murphy's quoting his law in your left ear and the Devil's sitting on your right shoulder egging him on. After I dropped a nice heavy red cast iron Mario Batali grill pan on my right foot and then darn near cut the tip of my left pinkie off with a harp peeler, I figured I'd best just stay right outa' there. Good thing I made this old fashioned peach crumble pie earlier in the week.
This beauty is adapted from one of my favorite old Canadian cookbooks (Purity), and makes perfect use of a few simple ingredients to showcase a half dozen wonderfully juicy, perfectly ripe peaches. Light on sugar and free of any fancy custard, the peaches rest on a single pastry shell sprinkled with a layer of walnutty crumbs. Topped with more crumbs, it's out of the oven and cooling in just 40 minutes. I can't imagine anything more flavorful, in fact I can hardly wait to make another one with some pears or even some of those gorgeous plums so available right now. Any excuse to make a pie, right?
By the way in case you're wondering - the toe's not broken, just black and blue and the finger...well the finger hurts like blazes!
Old Fashioned Peach
Crumble Pie
Preheat oven to 450.
Prepared single crust of your favorite pastry
6 fresh peaches, peeled and cut in half
1/2 cup all purpose flour
1/4 cup granulated sugar
1/4 cup lightly packed brown sugar
1 teaspoon cinnamon
Dash of salt
1/2 cup butter (1 stick)
Now - even William and I would eat that pie!!! Not too sweet - just Fruit and Nuts and Goodness! If you stop and think about it the kitchen is really a dangerous place filled with fire and sharp objects and heavy stuff! Amazing us delicate creatures venture in there at all! hehehehehehe Glad you are doing OK my friend.

Lea - cooking, much like growing old, is not for the faint of heart. LOL

I'm going to make sure that hubby reads this post so he knows that I'm not the only one who has clumsy attacks in the kitchen. He's gotten to the point where he won't even let me climb on a step stool to get something out of the cupboards...LOL
The pie looks fantastic!

Gee Mags, I thought everybody climbed on the counter to reach the upper cabinets and you have a step stool!
