We've been on an olive kick this week so if you're not a fan, you'd just better walk on by this one. I'm sure glad we didn't - talk about a superb way to cook fish!
Mahi Mahi, also known as Dorado resemble flounder and tilapia in flavor and are highly sought after by sport fisher people as putting up a great struggle on the fly line. I know this because a friend of ours who is a fly fishing guru would wax poetic after catching one, and he isn't the kind of guy to tell tall fish tales, at least I don't think he is.
Poached in a tomato sauce crowned with onions, a touch of anchovy, a hint of orange and some green olives, spiced with oregano, basil and a little garlic - it's a great way to cook any firm fleshed fish (try and say that one fast 3 times), never mind a fabulous weeknight dinner that only takes about 15 minutes to prepare. I served it on a bed of couscous flavored with orange, basil and black pepper to soak up all that wonderful sauce, but it would be great with rice or even a hunk of crusty bread. We thought it was awesome ...I'd make it again in a heartbeat!
Mahi Mahi in Tomato Olive Sauce
2 tablespoons olive oil
1 medium onion, sliced
1/2 cup dry white wine
2 anchovy fillets, chopped
1 – 14 ounce can diced tomatoes
2 cloves garlic, minced
1/2 teaspoon dried basil
2 teaspoons dried oregano
1 pound mahi mahi fillets
1 teaspoon finely grated orange rind
1/2 cup large green olives, pitted and quartered
In a large heavy saute pan with lid, heat oil over medium high heat. Add onion and saute until transparent and starting to turn golden (3 or 4 minutes). Add white wine and chopped anchovy fillets and cook until wine is reduced by half. Add diced tomatoes, garlic, basil, and oregano. Reduce heat and simmer uncovered for 5 minutes. Place mahi mahi fillets on top of sauce, top with green olives and orange rind, cover and simmer for 6 to 8 minutes, depending upon thickness of fish. Serve on a bed of couscous or rice. Serves 4.
