Shhhh - it's our little secret OK, but yes people we all know this is really a quiche. Just don't tell the big guy cause he's having leftovers for lunch AND he managed to have two pieces of this Bacon and Green Chile Pie last night for dinner. He loved it plus I happen to know for certain he wasn't asking "where's da' meat?" either.
If a quiche can be manly, this one definitely is! Loaded with bacon, spiced up cheese and green chiles, it tastes like a cross between a bacon filled chile rellano and a jalapeno popper. There was more than enough meat in it to satisfy my resident carnivore and yet it was light enough to appeal to the feminine side too. Great for brunch, lunch or a light supper along with a salad, it's another quick and easy no fuss easy on the cook perfect for a hot night in hell dinner.
By the way, a great way to guarantee that your quiche is going to have a fluffy texture is to cut the cheese into quarter inch cubes rather than grating it. That way the custard surrounds each piece of cheese rather than just sitting on top of a layer of melted goo.
Bacon and Green
1 refrigerated pie crust
8 slices bacon, cooked till crisp and crumbled
1- 6 ounce can diced green chilies, drained
1/2 cup finely chopped sweet onion
4 ounces Pepper Jack Cheese, cut into 1/4 inch cubes
4 ounces Hot Pepper Wisconsin Cheddar, cut into ¼ inch cubes
1-1/4 cups whole milk or half and half
1 Tablespoon all purpose flour
4 eggs
Preheat oven to 425. Spray a piece of foil with cooking spray and place it sprayed side down directly on to crust. Bake crust for 5 minutes. Remove from oven and remove foil. Lower oven temperature to 400. Beat together milk, flour and eggs in a medium sized bowl. Sprinkle cooked and crumbled bacon on the bottom of the crust, add green chilies and onion. Top with cheese cubes. Pour milk/egg/flour mixture over top. Bake for 30 to 35 minutes or until knife inserted into center comes out clean. Let quiche stand for 10 minutes before cutting. Had to make a pie today - no bacon - used Black Forest Ham and a bunch of odds and ends cheeses from the cheese drawer! but def. the green chiles - will eat for dinner!
