Well
people, we’re back from our morning workout and the big guy’s pouring us some
coffee before he gets started on cookin’ breakfast. Isn’t that why you work
out, so’s you can eat sausage, eggs, and English muffins for breakfast?
Yesterday
went by in a flash again – that’s my only complaint about being at the beach –
the days go by so darn fast. Can’t believe it’s been a week already since we
left Tucson and I have to admit the adventures on our drive up here seem like
they happened in another lifetime.
After
our stinging rejection at Waldport Public Library, we went to Yachats only to
find the library closed until noon. We used their WiFi access anyway from the
parking lot, then went for a drive and a long walk on Ona Beach. Sorry we
forgot the darn camera, but we’ll go back there soon so we can take pics for
ya’. Ona Beach is one of the many majestic and very quiet beaches found up and
down the Oregon coast. Immaculately clean and free from much humanity, you can
walk miles without seeing another soul. Max had a blast off leash until we
spotted a resident Bald Eagle on a large tree up on the cliffs – had to reel
the little guy in before he was Eagle fodder.
Since
we had a really late lunch of leftover Mulligatawny Soup and Peach/Strawberry
Pie, dinner last night was of the munchie kind. I know there’s not much new about the
sausage/cheese balls made from Bisquick and Jimmy Dean, but I had to create
something so I whipped up a batch and added some chopped onion, jalapeno
peppers and a can of green chiles. Believe you me, it sure made a difference in
the flavor profile. Give ‘em a try and let me know what ya think, OK?
J’Bug’s Chile Cheese Sausage Balls
1 pound bulk sausage, uncooked
1 cup Bisquick mix
2 cups shredded Cheddar Cheese
1/2 cup chopped onion
1 large Jalapeno pepper, finely
chopped
1 6 ounce can chopped green chiles
2 cloves garlic, minced
Mix together all ingredients and form
into 1 inch balls. Baked on ungreased baking sheet in 375 oven for 15 minutes
or until golden brown. Serve with mustard on the side. Makes 24.
Today’s
agenda – we’re going to a big party. There’s a clam bake at Nye Beach in
Newport and we’re heading there to enjoy some good grub and pre July 4th
festivities. We’ll take some pictures, show off our pooch (it's a dog friendly event) and generally
assimilate ourselves into the beach culture. TTFN
I already love the original recipe for Jimmy Dean's sausage balls but I can only imagine how much better they're going to taste with your additions.

I miss you too Mags and absolutely HATE being disconnected from the internet. Yikes - I think I live to blog, and/or read others. Happy July 4th to you too!

I think adding green chiles to the sausage balls is brilliant - I must try - I love snacks for meals! Fabulous that you found a pup friendly festive gathering - those are so wonderful! Rare here in the South... Happy 4th!
