Last night's intention to make reservations for dinner was thwarted by a guilty conscience. You see the big guy's always tired on Friday nights and ready to relax with a drink when he gets home, so at 4:30 PM I figured I'd better get over my snit and get something going for dinner.
Friday's are traditionally "easy peasy" night around here so dinner didn't have to be elaborate by any stretch of the imagination. By 4:40 PM I had a pizza crust ready and rising thanks to the magic of small kitchen appliances, and by the time the big guy came home at 5:50 the filling was prepped and the dough was resting on the board, waiting to be formed into pizza or something more. I settled for the more!
Rolled out to a 16 x 12 rectangle, the dough was dressed with line right down the middle of cooked chorizo sausage, poblano pepper rings, roasted red pepper, chopped onion, drained RO-TEL tomatoes and cheese - tons and tons of cheese. Baked in a 375 oven for 35 minutes, the result was a cross cultural extravaganza of crispy light pizza crust surrounding a spicy Mexican flavored filling. It was awesome - absolutely incredibly delicious.
Next time you're craving pizza why not make a stromboli instead, especially if you're feeding a meat lover. You can stuff it with almost anything, in any quantity which makes it perfect as a pantry raid kind of meal and the bonus is it's a lot easier to eat than pizza. Imagine a pulled pork and barbecue sauce stromboli, or leftover roast chicken with spinach and a white sauce or leftover Chicken Parmigiana or meatballs or... I mean the possibilities are endless aren't they? Check out this earlier edition for more ideas and here's my no fear never fail pizza dough recipe. I know what you mean Pam. I forget too, but they're almost easier than making pizza and at least you don't have to worry about sliding them off the peel and missing the pizza stone.
