OK people here's the story. There's the hot dog that we all know and love, grilled or boiled in a split hot dog bun topped with relish, mustard and ketchup....then there's the Sonoran Hot Dog.
We have Mexico to thank for the Sonoran Hot Dog and boy is it popular in this neck of the woods. This little wienie is wrapped in bacon and cooked on the barbecue, then cradled in a soft roll called a "Bolillo" (pronounced bo lee yo) that's steamed to make it soft and fluffy. The roll is split on the top, rather than on the side, but not all the way through like a regular hot dog bun and that's on purpose you know. It's so you can pile re-fried beans and cheese on the roll UNDER the bacon wrapped hot dog and the goodies all stay right inside that little boat shaped roll.
Then you can top 'em with whatever you want - like chopped tomatoes, onions, peppers, mayo, ketchup, mustard or even roasted green onions and roasted jalapeno's like some stands do here in Tucson. Just use your imagination - you could even add some chorizo, avocados or pineapple too. We kept ours rather simple and topped them with homemade roasted tomato/sweet onion/jalapeno/anaheim pepper salsa, and avocado cream. They were absolutely incredible and worth every stinkin' delicious wonderful calorie!
The deal on these babies other than the bacon wrapped dog and all the "trimmings" is the bun and believe you me I had lots of practice making them. Even I have my very humbling failures from time to time and yesterday was my turn. I was afraid I was going to have to hit the trail and find an open Mexican Hot Dog stand so I could beg for some buns.
As you can see from the picture, effort number one is at the back of the picture and didn't turn out very well. I overworked the dough (yes, it's possible to overwork gluten), then the yeast died and the rolls were hard, tough and had a very weird texture. Not to be undone, I tried a different recipe and the second batch were the keepers. Adapted from Southern Living via myrecipes.com, this Bolillo was a "single rise" roll with a very light texture and a slightly sweet flavor. It was soft, fluffy and absolutely perfect - in fact, it stood up to a steaming very well and yet was able to hold all the beans, cheese, bacon wrapped wienie salsa loaded goodness we could pile onto it.
