Friday night's requisite "easy" dinner almost didn't happen because I couldn't decide what to make not that we had many choices available. Pantry cleaning kind of takes care of the decisions or indecision in my case.
This particular recipe's been on my favorites list for a long time and in fact we've shared it with you before but I've never used roasted corn before and I have to admit it does make a difference. Talk about from "bland to beautiful" although a chowder made with bacon, celery, onion, potato and corn could hardly be called bland. The roasted corn really gives it a different sweet smoky flavor that's some yum.
In the old days I would have garnished it with parsley and called it dinner, but now that I'm living in the Southern U.S. with a redneck cowboy, there's hardly a dish that leaves the kitchen that doesn't have a garnish of salsa and/or hot sauce on it. You're looking at the big guy's bowl of chowder with a ton of Tapatio hot sauce, one of the many choices we have on hand in the refrigerator for his dining pleasure. He puts it on everything.
So what's on the agenda today you ask? Well, it's our normal day for breakfast out followed by a shopping trip, but today's will be abbreviated since we're leaving at the end of the week. I'm not excited - not one bit! Can you tell?
Now, that looks like a perfectly garnished bowl of soup!

Beautiful looking bowl of Chowder!!!! I like the idea of roasting the corn!!!! Does Max realize you are about to head out yet?

Lea - Max certainly senses that something's up because we're packing stuff and getting ready. He really loves the trip - the only worry is that he's due for seizures during the time we'll be on the road, but we'll deal with it when we have to.
