Last night's dinner was a fake. You see, we'd picked up some beautiful cod on our shopping trip to Sprouts over the weekend and I had planned to coat it in thinly sliced potatoes like I've done before, bake it and serve it on a bed of slaw but unfortunately the potato bin was empty. Believe you me that kind of took the wind out of my sails.
Since I'd already whipped up the slaw, I thought to heck with it and to hang with the calories - we'll have it coated and fried. Chips were out of the question but a beautiful sweet onion beckoned and thus the low calorie impostor was born. Doesn't take much convincing for me to fall off the wagon, does it?
Sorry I can't supply you with recipes because I kind of threw everything together, but I can tell you the onion rings were coated in a mixture of beaten egg, buttermilk and hot sauce, then breaded in flour mixed with a little cornmeal. I double dipped some of them and single dipped others and to be quite honest, the single dippers were much crispier so it does prove the old adage - less is more.
As for the cod, I cut it into fingers then sprinkled it with some Cajun seasoning and a little Old Bay, and gave it the same dippin' treatment as the onion rings although I mixed the cornmeal with dried breadcrumbs for the coating. It cooked for exactly two and a half minutes and was perfectly moist inside with a really crisp coating. Dipped in tartar sauce along with creamy coleslaw on the side we were more than sufficiently suffuncified.
As for today - well I need to fly so I can get my 45 minutes in on the elliptical before Max clears me out the door. You see, it's his morning at the beauty parlor and while he's there I'll run my long list of errands and hopefully we're home to the cool house by noon. It is stinkin' hot ...I know bear with me because I've said it before, but it feels suspiciously like monsoon season's just around the corner. Now come on, isn't it just a little early for that?
Well, I stopped by to see if we were making the same thing today. Nope. But that's because today is Wednesday and I don't cook on Wednesday. Hubby picks up dinner. Guess what I told him to get? Yep, fish and chips. Girlfriend we are on the same wavelength.

You're far more energetic than I am in this heat. We ate leftovers again last night and we're ordering pizza with Ken and Molly tonight. I am officially clueless on what to blog about next!

Mags - tell me about it! You could blog about this friend you have who but for huge luck didn't end up as an ink spot today. A guy tried to run me off a freeway on ramp..kinda like you'd see in a "shoot 'em up movie". I was so sceeeerd! I'm NEVER driving again.

I love onion rings - and those look SO crunchy and delicious!!!! and the cole slaw!!!! The fish - yummy!!! Got a cold beer to go with that? I'm there!!!!

Lea, you're right. The onion rings were really crunchy (needed more salt though) and a beer would have been wonderful!
