Remember last week when we enjoyed Biba's Bolognese as the crowning glory on a bowl of risotto? Well I wisely shoved the leftover sauce into the freezer and last night we had it reborn in a baked pasta. What can I say except it's great that we're working off all these carb calories, seeing as we had a little spaghetti Monday night too. Didn't plan that very well did I?
This go round, I made a basic bechamel sauce with a touch of freshly ground nutmeg and combined it with some cooked radiatore pasta then transferred it to a casserole dish. Topped with slices of provolone and the bolognese, it spent about 25 minutes in a 350 oven getting all melted and bubbly while I made a green salad. I have to admit there's absolutely no question - leftovers can be fabulous darlings, simply fabulous.
That same bolognese could also have worked in a lasagne, as a sauce for eggplant or chicken parmesan or topping some ravioli but I'm just as glad it ended up where it did. It was delicious!
I spent the day packing fleece along with what we would consider our "winter" clothes down here in the desert to take with us to the Pacific Northwest so yours truly doesn't freeze her ever lovin' tarts off. I never thought I'd live to see the day that temperatures in the 60's were cold but after 8 years here I'm singing that tune. I keep telling the big guy that I can't wait to curl up under our down comforter with the Maxer Dawg warming my feet and he just laughs...he'll be laughing even harder when he catches a glimpse of my soon to be blue lips and chattering teeth. I'm so excited I can't stand it - can't WAIT to be COLD!

At this very moment it is 95 degrees here with a million percent humidity. The only thing I can think of with my hair dripping wet is wanting to be cold too, so I hear ya sister!

Lea, thank goodness for AC. It was 111 here yesterday and we're heading there again today. Monsoons are here, it's now hot and muggy. Time to get outa' Dodge.
