Wow - another school year has come and gone and here we are at grad weekend. I have to admit I'm already running behind this morning so I'll have to be brief. Last night's dinner was not really a dinner if you want to know the truth. It's been quite the week and I for one did not feel like cooking - not one bit. I had planned to make clam and corn fritters but couldn't mustard the energy to whip them up so we had cooked shrimp with spicy tartar sauce along with some bruschetta.
We likely all have our favorite recipes for bruschetta although I'm not sure why I don't make this Italian salsa more often. I just looked at those poor, perfectly ripe tomatoes on my counter begging for attention and said "gotcha". Two of them were chopped and went into a bowl along with a quarter cup of red onion, 2 minced cloves of garlic, 3 Tablespoons each of olive oil and chopped fresh basil from my garden and half that of balsamic vinegar. Spread on some sliced and grilled ciabatta rolls, we were happy campers.
As for the shrimp - thank Trader Joe's freezer section and the spicy tartar sauce is an Emeril recipe repeat from days gone by. It's so darn good though it deserved a second appearance.
