Believe me people it's not what you think. Two weeks ago I spent the week making 5 dozen whoopie pies of various and sundry flavors as a reward for one of the big guy's classes. You see he gave them a take home exam and when they returned their essays on the appointed day and time, they were rewarded with a whoopie pie or two. Given the size of pies I certainly can't imagine anyone eating more than one, but hey we're talking starving students here which explains why a class of 47 could consume 60 pies - even taking into account that some of the "fashion girls" turned down the opportunity. Pooey on them I say. Their loss!
In my zeal to create these monster treats I neglected to take pictures of the finished product with the exception of the Classic Chocolate Whoopie Pies. They joined Banana Chocolate Chip Peanut Butter, Maple Walnut, Triple Lemon Delights and Strawberries and Cream and all left the house in a giant cooler bag. I feel a particular need to brag about the fact that I tasted not one of them ...hey, would you rather eat a 500 calorie whoopie pie or your caloric intake for half a day. Seemed like a no brainer to me.
From King Arthur Flour's web site, these whoopies are of the deepest darkest chocolate kind made from Dutch process cocoa with some espresso powder joining the mix. I'm going to link you to the site directly, because not only did I make the Chocolate Espresso ones from here, I also made their Maple Walnut and Banana Chocolate Chip too.
Now I could give you an honest review if you want one based on the taste of raw dough fingered from an empty bowl, but I've got to tell you I was some surprised as to which flavor won the real popularity contest. Assuming the chocolate would win hands down, I was amazed to hear that the big winners were the Triple Lemon and the Strawberries and Cream.
I'm happy to provide you with the recipe for the Strawberries and Cream, concocted from chopped fresh strawberries and filled with a layer of strawberry jam next to rich and smooth cream cheese frosting. WHAT!? They were REWARDED with a pie? Have pigs sprouted wings? Has hell frozen over? Crap, I'm taking out a life insurance policy tomorrow. The ol' man has gone soft. Excuse me while I get a crane to lift my jaw off the floor.

Uhhh, ya and it's the second year of the tradition but sad to say, hell has not frozen over. It's a very unpleasant 92 degrees here today. LOL

Don't you wish you would have waited to take that class from me instead of the guy with the face falling off? Besides I have to do something to make them like me. Kind of like a mom tying a pork chop around her kids neck so the dogs will play with him.
