Last night's dinner was born of necessity - it's necessary to finish working our way through the last few packages of clams in the freezer because we'll be replacing our stash in a month or so. I know EXACTLY how long it is till we go but I dare not say a word until Friday so I can say FIVE weeks. Ha.
I realize that we're starting to get a little repetitive in the clam department but there's only so much you can do with them and one of our favorites just happens to be Clams Casino. This particular recipe's a lower calorie version of Giada's from Food Network and it's a real keeper, especially accompanied by spaghetti with a light lemony sauce. If you want to know the honest truth, I could live on this lemon pasta quite easily and I know for a fact the big guy'd quite happily survive on the clam casserole - well maybe not entirely. He's been bugging me about calf fries but he'll just have to get over that one ...course there's also the fact that he heard yesterday from a very good source that Lee Lee's Supermarket carries the goat variety of those. Good heavens - what's next! I knew I was in trouble when he asked if I needed anything from Lee Lee's and volunteered to make a run there. No way, Jose'. It ain't gonna' happen!
The big guy was on a roll yesterday and grilled some chicken and roasted corn yesterday afternoon while I was writing the Whoopie post. I know I can't believe it either but we didn't eat a one of it - the chicken's earmarked for something special later in the week and the corn was needing cooking and will be reborn in chowder, salsa, salad or something. I just could resist showing you the picture though - kinda drool worthy isn't it? The man's a gem!
OK - not being a big fan of bi-valves - I would of gone for the chicken and corn for sure!!!! But that photo of the clams casino sure is lovely!!! I am not sure what you are doing differently - but your photos are less "harsh" for lack of a better term - really nice!
And - hey - Oregon is rapidly approaching - gotta clean out the freezer for room for the new batch of clams - eh?

Lea - you're right we'll be in Oregon before ya' know it. Yippee! Thanks re the photo comment - we've changed the angle and it seems to be making a difference.

You know I can't do the clams but that lemon pasta sounds delicious. And don't even get me started on the chicken and grilled corn. I haven't had dinner yet and I'm starving!
