Well I think we've finally done it. Salmon's becoming a regular fixture around here and only because I've been persistent in my attempts to spice it up and make it interesting. We like it, we really like it.
Last night's version was oh so easy and brilliant I must say. Thanks to Gourmet Magazine, buffalo wings have morphed into buffalo salmon and I've gotta say I'm not sure why I didn't think of this myself. Ticks me off when that happens! The typical ingredients for making buffalo wings adorn the salmon fillet along with a sprinkle of panko crumbs for crunch. It hits the oven for 18 minutes and low and behold, salmon with an Eastern attitude. Download Buffalo Salmon
If you like buffalo wings, you're going to absolutely love this. It is delicious - wonderfully delicious with some of the sauce on the side...moist, flavorful, spicy, crunchy from the crisped up panko crumbs and generally just a huge surprise to the tastebuds. Who knew? We enjoyed it on top of some pan grilled baby broccoli with a few toasted walnuts and a cool throw in everything but the kitchen sink kinda' pasta salad.
I adore buffalo wings and you're right this is genius!

Cathy - It's a keeper that's for sure and I'm thinking it would be great done on the barby too - may be a tad smokey because of the butter, but man the flavor would be spectacular!

I actually have salmon planned for dinner tonight using maple syrup, soy sauce and dijon mustard (found the recipe online) but now you've got me rethinking! It sounds delicious and I love all things buffalo.

This is such a great idea! My husband isn;t a huge salmon fan but he LOVES buffalo wings... this might just turn him on to salmon too! I'm so excited to try it!

Katie - I know what you mean. The big guy isn't either so that's been a challenge, but he loved this, in fact he said the leftovers were fabulous cold. Let me know what you think when you make it OK?
