Now, for those of you who are exclaiming that chickens don't have balls - have I got a surprise for you. As you've likely figured out by now, the big guy and I like to have munchies on Friday for dinner rather than the usual well balanced protein/carb/vegetable trio I try to plan for the other days of the week. In otherwords, we indulge in carb loaded, calorie laden, deep fried deliciousness once a week (OK - sometimes more but who's counting?) Last night's special was courtesy of Mags at The Other Side of Fifty and believe you me, her little balls are tremendous.
Remember the chicken the big guy cooked on Sunday? Well it rested in the freezer all week and rose to cluck another day. This is what it went into along with some cream cheese, a half cup of Louisiana hot sauce, garlic, onion and cheese. The only changes I made to Mags' recipe were to use garlic cloves, red onion and a 3 cheese blend including cheddar, monteray jack and mozzarella instead of sharp cheddar. I also mixed cornmeal in with the panko crumbs to give them a little different crunch.
They are superb - so wonderful in fact that the big guy had 16 of them and I've no intention of sharing the number I chowed down. They're certainly great party food and open the door to infinite possibilities - like adding a cube of blue cheese in the middle of them, or how 'bout making them from that dreaded left over Thanksgiving turkey? You could even add green chilies (our favorites), use Cholula hot sauce and dip them in mole instead of blue cheese dressing. Course you'd have to give them another name but we'll leave that one up to your imagination too. They're amazing! Thanks Mags for passing these little gems along for all of us to enjoy.
