Please, please can I have some more. More of everything! The big guy cooked dinner yesterday - actually he started late afternoon and put this beautiful almost 5 pound bird on the Weber rotisserie. As you can tell from the picture - he did it again. It was superb! By the way in case you're curious, we purchased our Weber rotisserie on line a few years ago because we couldn't find one locally. Believe you me if you have a Weber kettle, you've just got to get this little accessory. The big guy swears by it and I can vouch about the quality of the cookin' he does on it!
He doesn't divulge secrets about HOW he does it, but I'll give you a hint - it involves lots of limes and lemons, and the flavor is not to be believed with moist, succulent meat and the skin - oh heavens the skin is incredible. I'll tell ya' if my seester Joy was anywhere near that bird, it would be bald in no time! My favorite part are the wings - crisp perfectly crunchy tips and fall off the bone tender meat - but you're looking at the big guy's plate. He's a thigh & leg man.
The big guy also made an incredibly tasty two potato salad to go along with the cluck that included both sweet and Yukon Gold potatoes as well as celery, Serrano chiles, creole mustard, mayo, tarragon and bacon as a garnish. Honestly, if you didn't know there were sweet potatoes in it, you'd be hard pressed to figure out just what added that extra flavor. Delicious and different, this recipe's adapted from the Neely's of Food Network fame. Great with chicken, it would also be wonderful with ribs, or steak, or just about anything you'd have at a summer barbecue. Download Two Potato Salad with Mustard and Bacon
What a treat it was to have a day off from the kitchen, particularly since I'm just a tissue away from total misery with these allergies...but, hold onto your hats! ELEVEN weeks and we'll be in Oregon - blessed be. Sure as heck hope we all survive the wait. Ah...honey, on second thoughts can I have another Baja Sunset margarita? More about those later - I promise!
Love the looks of the potato salad - I am a huge fan of all kinds and never thought to try it with sweet potatoes. As soon as it stops snowing, this is what I am making.

I see that's it's snowing up there. Ahh springtime in Alberta - so unpredictable, but at least there's no allergies right now! Lucky you, although I know you'd trade in a second. Believe me, so would I - LOL. By the way, thanks for trying another one of my recipes. Your stromboli looks fabulous!

Lea - no problemo sneaking sweet pots through on your guy this way! Some yummy! Yes, I'm lucky the big guy loves to cook. He's pretty darn incredible with a barby!

Would you look at that chicken. Makes me hungry, and I just ate! No hints on that lovely crusty skin, eh?

That bird looks to die for. Your big guy knows his Weber, I'll give him that!
I can't wait to try the potato salad. You know how I love working sweet potatoes in anywhere I can.
I hope your allergies let up soon hon. My are acting up a bit here too with all the flowering trees, but I consider it a trade-off because everything is just so colorful and beautiful again!

Sarah - isn't that bird incredible. He does it every time and I did ask how - he said just butter. Ya, right! Butter, lemons, limes, the right temperature, proper charcoal, wood smoke....and so on and so on
Mags - yup, the big guy knows his stuff. That salad is yummy and even better today cause the flavors had a chance to blend. Love the tarragon in it! Re allergies - I'm such a complainer and when it's mostly dead around here and I'm complainin' cause it's not, but holy cow it's miserable right now. Even Max is suffering! We had a sneezing contest today. I bet it's beautiful where you are.
