Hey sports fans. What's shakin'? Hockey playoff season and I notice my hometown team's out of contention. I figure it's gotta be plum quiet in the Flames' office if memory serves me correctly - even after being out of the biz for 16 years, I still remember "the agony of defeat" like it was yesterday. Some life lessons stay with ya' a long time don't they? Now "the agony of de feet" has a whole new meaning - sunburned toes and calluses caused from wearing sandals. I think I like this life a whole lot better than the last one. LOL
Speaking of sunburn, we cooled off yesterday to a balmy 76, but I went ahead with the plan and made chicken salad for dinner anyway. Salad season is well underway in these parts with temperatures normally in the mid to high 80's and on the upward climb. It makes enormous sense to plan meals that require limited use of the stove when it's hot outside; however, I realize for most of you barbecuing a chicken and making chicken salad are a little way off. Tuck this one away till the time's right, OK cause it's a pretty darn good chicken salad.
We have chicken salad quite often, so I try and change it up a bit every now and then even though the big guy informed me this morning that he prefers the one with dried cranberries and nuts. He kinda' fooled me because he sure looked like he was enjoying this one. Spruced up with dried fruit including pineapple and apricots and garnished with almonds, this version has a rather exotic flavor thanks to curry and mango chutney that's added to the mayo and sour cream in the dressing. Livened up with lemon juice and drizzled with a touch of honey, we didn't have any trouble at all finishing off the big guy's barbecued bird from Sunday night. Sure wish he'd cooked two! When we have a salad for dinner, I'm usually craving dessert (...I know..I'm usually ALWAYS craving dessert) so I whipped up a microwaved chocolate pudding. Neither was the big guy, but he's being converted. There's so many different kinds of curry flavors, I bet we could find one you'd love!

I'm a "sweet" curry person and I agree with the big guy that the best chicken salad has dried cranberries and nuts, but I'm always up to try new ways to make chicken salad. It looks delicious June.... and so does the puddin'
