Sorry guys, this is gonna' be short and sweet. One of these days we'll have a nice long visit, but unfortunately it won't be today.
Last night's dinner was kinda' on the run too, but certainly didn't suffer in the "flavortown" department. Using some of the pounds and pounds of leftover Easter ham, we had a Croque Madame sandwich, which is really just a fancy knife and fork version of a ham and cheese. A flavorful cheese sauce goes inside a couple of slices of bread - in our case, homemade white bread, then gets layered with more grated cheese, ham slices and mustard. Grilled till it's brown and crispy on the outside, then topped with more cheese sauce, it's finished under the broiler while an egg cooks to crown its glory.Download Croque Madame
The result is an incredibly tasty morsel of goodness, that along with a fresh green salad and a glass of wine, transports the nosher to a little French bistro on the banks of the Seine. I wish, oh man don't I wish! Uhh - a note of warning - watch'em when they're under the broiler cause they brown kinda' fast. Good thing we like burnt toast. Ha.
So what's up today people? Well, our saltillo floors are being cleaned, repaired and refinished which has meant moving a ton of furniture to get to the dust bunnies underneath. It's been a busy couple of days, that's for sure so I gotta fly. Maxie's going to visit Grandma and Grandpa for the day and as for me - well at some point I may just get to bask in the sunshine with a good book. I said may - there's always the ironing!
I've been wanting to make Croque Madame ever since I saw Paula Deen make it on her show (after her big honeymoon trip with what's his name)
I hope you got some sun basking time today. Sounds like you've been entirely too busy. And you know how I feel about ironing....lol

Love a Croque Madame! Want one soon! Need more ham! Bet you will be loving those "new" floors! Ironing is Evil!!!! hehehehehe I have no idea where the iron is - but I know we have one here somewhere...

Lea - Wish I could send you some ham. I think we might have over bought, though it's gonna' taste darn good on a biscuit in about 30 seconds! Ha.
